Ingredients:
· Lotus root 300g (peeled and sliced)
· Red dates 8–10 (pitted)
· Goji berries 1 tablespoon (optional)
· Rock sugar about 1 tablespoon
· Water 1000ml
· Ginger slices 2 (optional, for aroma)

Instructions:
1. Prepare the Ingredients
Peel and slice the lotus root. Rinse and pit the red dates, and soak the goji berries in water for 10 minutes.

2. Blanch the Lotus Root
Bring a pot of water to a boil, add the lotus root slices, and blanch for 1 minute. Drain well to remove any bitterness.

3. Make the Base
Pour water into a pot, add red dates and ginger slices, bring to a boil, then simmer gently for 15 minutes.

4. Add the Lotus Root
Add the blanched lotus root slices and simmer for another 20–30 minutes until tender and translucent.

5. Sweeten the Soup
Add rock sugar and goji berries, simmer for 5 more minutes until flavors meld together.

6. Serve and Enjoy
Serve warm for comfort or chilled for a refreshing experience.
